Vegan Mozzarella Cheese

Ingredients

  • 1/4 cup raw cashews, soaked in hot water for 30 minutes
  • 1 cup hot water
  • 2 + 1/4 tbsp. tapioca starch
  • 1 tbsp extra virgin olive oil
  • 1 tsp fresh lemon juice
  • 1 tsp garlic powder (onion powder is also good!)
  • 1 tsp sea salt

Note: For this recipe you need a powerful blender!

 

Procedure

It’s so easy to make this mozzarella if you have a nice high speed blender.

Put all the ingredients in a blender.

Blend all together for about one minute or until really homogeneous.

Pour the mixture in a small saucepan.

Cook it over a medium heat for about 5 minutes or until thick and smooth.

Use a whisk to stir it constantly.

You will notice that after a couple minutes the mixture starts to thicken

and change its consistency.

Keep stirring energetically!

When it gets thick and smooth, remove it from the stove.

With a spatula pour the mixture in a small bowl to give it a mozzarella shape.

Let it cool and place it in a plate.

It’s ready to eat!

Make a Vegan Caprese Salad!

  • tomato slices
  • fresh basil
  • vegan mozzarella
  • sea salt and black pepper to taste
  • extra virgin olive oil
  • vinegar

  • A piece of toast (from the gluten free bread I make)
  • 2 tomato slices
  • 2 vegan mozzarella slices
  • calamata olives tapenade
  • fresh basil
